Problem
To heat ml of milk (treat it as water) from C to C, an espresso machine uses steam at C which condenses in the milk. How many grams of steam are needed? Data: J/(kg·K), J/kg.
Solution
Energy required by the milk. The milk, of mass kg, must go from C to C, a rise of K: Energy released by the steam. A mass (in kg) of steam goes through two steps: first it condenses at C releasing the latent heat, then the hot liquid cools from C down to C. Balance. The energy released equals that absorbed by the milk: The condensation term dominates: almost all the useful energy comes from the latent heat, not from the subsequent cooling.
